Buckeyes (Peanut Butter and Chocolate Treats)
You don’t have to be from Ohio to enjoy eating buckeyes. If you love peanut butter and chocolate, this will be a favorite after just one bite. It’s a real bonus that they are super easy to make and will last for a long time in the freezer.
I often double or triple the basic recipe just to have some on hand. No joke, we eat about half the batch while making them. Those little peanut butter balls are just too tempting! Don’t tell anyone, but I like to eat them before they are dipped in chocolate!
Buckeyes (Peanut Butter and Chocolate Treats)
Ingredients:
1 (18 oz.) jar creamy peanut butter
1 stick butter (room temp)
1 box (16 oz.) powder sugar
1 tablespoon vanilla
12 ounces chocolate chips (your choice – milk or semi)
4 oz. paraffin wax (if using the block type, just break off about 1/4)
Directions:
~ Using mixer – Cream peanut butter and butter until completely mixed
~ Slowly combine the sugar and vanilla. Mix well
~ Scoop out and roll into 1 inch balls. Place on tray and chill in refrigerator while melting chocolate
~ Melt chocolate with paraffin wax in a double boiler – don’t microwave it!
~ Set up an assembly line to complete the dipping: Stab a peanut ball with a toothpick and dip into the chocolate/wax mixture just a little over half way (be careful or the ball will slip off the toothpick) – You may find it is easier to hold toothpick with ball and spoon chocolate over it instead of dipping.
~ Place chocolate dipped ball on parchment or foil to set up.
~ You can store at room temperature in covered container or freeze for later.
Didn’t I say they were super easy to make? A word to the warning…add the sugar slowly or you will have a wall of white powder all over your kitchen!
My fiance’s mother just made these for us. They’re so good!
My mother has a small home business making cookie, and buckeyes are one of her biggest sellers,we just made these on Wednesday, they are so good! FYI you can get rid of the toothpick holes by dipping your finger in a little water and gently rubbing the little hole, when it dries you will not be able to tell. Thanks for the great recipes.
Thanks for the tip about getting rid of the toothpick hole.
I love buckeye cookies!
Oh my goodness, I just love these. I’ve never tried making them before. Right now i have to find recipes that don’t require baking because my oven quit on me!
Buckeyes have been our family’s favorite since my daughter got married and moved to Ohio.
