Freezer Meal Honey Balsamic Vinegar Chicken
Freezer Meals sure make dinner easier. This is a sticky wonderful tasting chicken that will have you licking your fingers before you reach for a napkin. You will not want to waste a drop. The great thing about this recipe is you can cook it in the oven or throw it all in the slow cooker before leaving for work.
We always make a double batch of this but we have four adults eating.
Ingredients:
1/2 cup Balsamic Vinegar
1/4 cup Soy Sauce
1/2 cup Honey
2 Tablespoons Olive Oil
4 Cloves Garlic
1 Tablespoon Onion Powder
1/2 teaspoon Salt
6-8 chicken legs (really any combination of cut up chicken works)
1 Tablespoon Corn Starch or Flour
1/4 cup Brown Sugar
Directions:
~ Combine all the ingredients above the chicken into a large baggie and squish to mix
~ Add chicken
~ Seal baggie and press around to coat the chicken in the marinade
~ Remove as much air as possible and make sure baggie is sealed completely. We always place this baggie inside another baggie as a precaution because cleaning up a mess of frozen marinade is not fun!
When you are ready to prepare the meal you have two options:
Option #1:
~ Place in refrigerator the night before (place in a bowl again as a precaution)
~ When you are ready to cook, start preheating oven to 450 degrees
~ Remove chicken from the baggie (save marinade) and place the chicken on a foil lined baking sheet
~ Bake at 30 minutes at 450
~ While chicken is baking (I start this about 20 minutes into cooking process), place reserved marinade in saucepan and bring to a boil. Allow to boil for 5 minutes to kill any germs and then add the corn starch and brown sugar. Stir well and drop heat to simmer until timer is up on chicken
~ Pour reduced glaze over chicken and return to oven under the broiler on high for 5 minutes
Option #2:
~ Place in refrigerator the night before (place in a bowl again as a precaution)
~ In the morning, toss everything into the slow cooker and cook on low 8 hours or high for 4 hours
~ 30 minutes before serving time, combine the flour and brown sugar with 4 ounces of tap water. Mix well and stir into the chicken
Both options render the most tender chicken cooked in one yummerlious sauce!
