Strawberry Raspberry Frozen Pops
My crew loves fruit. They eat it like they may never see it again all summer long. Frozen pops have become my answer to using up any fruit that is starting to turn. Oh the drama if a banana served has brown spots on it!
The easiest and one of my favorite frozen pop is my Strawberry Raspberry Frozen Pop. This delicious frozen pop only takes two ingredients and the kids (all ages) love them. The combination of strawberries and raspberries is not too sweet and has just a little kick of tart.
Ingredients:
12-14 whole strawberries
1/2 cup raspberries
Directions:
Wash fruit and top strawberries
Place fruit in food processor and pulse until smooth (taste puree and add sweetener if desired)
Pour into your favorite frozen pop mold or plastic cup
Freeze until hard
To remove the frozen pop from your mold simply cup your hand around the frozen pop for a minute or two, it should slip right out of the mold. If it still doesn’t want to release, run the mold under warm water.
You can use any fruit combination to make your frozen pops. I toss the last few pieces of fruit left into a baggie and store in the freezer until needed for frozen pops.
Here is my favorite mold to use for frozen pops is the Lebice Popsicle Mold. The set makes six pops and what is so nice is that it keeps the pops upright and secure. No more leaks from your molds falling over.
This Popsicle mold comes with a collapsible funnel to help reduce the mess and a small cleaning brush to make it easy to prepare the molds for the next use.
I really like that the holders have a drip tray that catches the melting pop. They really do help with things not being too messy. Cleanup is easy. I prefer to soak and wash in hot soapy water before rinsing in a vinegar bath however the tray and molds are top rack safe for your dishwasher.
