Roasted Garlic Red Potatoes and Green Beans
Potatoes and green beans have always been a favorite combination of mine but usually I cook them in the slow cooker. Our daughter Beth started making hers in the oven as she loves quick and easy vegetables. I agree with her that it doesn’t get much easier than this but the flavor is fantastic!
Ingredients:
1 pound green beans
8 red potatoes, quartered
2 tablespoons olive oil
1 teaspoon garlic salt
1 teaspoon ground lemon – black pepper (ground pepper is fine)
1 teaspoon dried parsley
1 teaspoon popcorn butter (you can use regular butter, melted)
Directions:
~ Preheat oven to 400 degrees and spray your baking pan with a non stick cooking spray
~ In a medium bowl mix together all the spices
~ Place potatoes in a large bowl and drizzle half the spice mixture over them. Toss until all are coated
~ Bake potatoes on one half of the baking sheet and bake for 15 minutes
~ Place green beans in bowl and drizzle the remaining spice mix over and toss until coated
~ Add green beans to baking dish (other half of potato pan) and bake for an additional 20-25 minutes or until potatoes are brown and fork tender
Serve combined in a large bowl or as separate side dishes.
Optional: Squeeze juice of one lemon over entire dish before serving.
